Garlic Grilled Scallops, Sauteed Spinach, Riced Potatoes

Sauteed Spinach {Whole30} {Paleo}

This is one of my favorite Whole30 side dishes 🙂

Sauteed Spinach

Servings 4


  • 1 bag spinach leaves
  • 2 T olive oil
  • 2 T minced garlic
  • 1 t lemon juice
  • salt optional


  1. Wash spinach leaves.

  2. In a medium pot, heat oil and minced garlic, saute until browned (~1 minute).

  3. Add all of the spinach leaves, slowly, and cover.

  4. After about two minutes, stir, and continue until spinach is wilted.

  5. Add lemon juice.

  6. Serve immediately with a slotted spoon.
