This is one of my favorite Whole30 side dishes 🙂
- 1 bag spinach leaves
- 2 T olive oil
- 2 T minced garlic
- 1 t lemon juice
- salt optional
Wash spinach leaves.
In a medium pot, heat oil and minced garlic, saute until browned (~1 minute).
Add all of the spinach leaves, slowly, and cover.
After about two minutes, stir, and continue until spinach is wilted.
Add lemon juice.
Serve immediately with a slotted spoon.
