Garlic Grilled Scallops, Sauteed Spinach, Riced Potatoes

Riced Potatoes {Whole30}

This recipe is one my grandmother always made growing up…who knew it was Whole30 approved!?!

Riced Potatoes

Servings 4


  • 4 large Yukon Gold Potatoes peeled, cubed


  1. Bring a large pot of water to boil.

  2. Add potatoes, reduce heat to a simmer, 20-25 minutes, or until potatoes are tender.

  3. Drain potatoes and return to the pot.

  4. Using a potato ricer, press potatoes into a large bowl.

  5. Serve immediately.
