Chocolate Zucchini Cake

My mom made this cake for us every summer growing up.  When my son requested a chocolate cake with chocolate icing for his birthday, I knew this recipe would be a hit!

Chocolate Zucchini Cake

Servings 9


  • 2 T butter softened
  • 1/4 c coconut oil melted
  • 3/4 c sugar white
  • 1 egg
  • 1 t vanilla
  • 1/4 c sour milk milk with a splash of vinegar
  • 3/4 c flour
  • 2 T cocoa
  • 1/2 t baking soda
  • 1/2 t baking powder
  • 1 t cinnamon
  • 1 c grated zucchini peel on
  • 1/4 c dark chocolate chunks
  • dark chocolate icing optional


  1. Preheat oven to 325F degrees.

  2. In a large mixing bowl, combine butter, oil, sugar, eggs, vanilla, and milk.  Mix with a hand mixer until smooth.

  3. Slowly add in flour.  Then add cocoa, baking soda, baking powder, and cinnamon.  Mix until smooth.

  4. Add zucchini and fold in with a spoon.

  5. Add chocolate chips and fold in with a spoon.

  6. Put batter in a greased (I use coconut oil) 8x8in  square pan.

  7. Bake for 30-35 minutes.  

  8. Optional: Once cooled, ice cake.
