While you can enjoy this gluten-free delishiousness in any color peppers, I’m VERY partial to the orange ones 🙂
Turkey Stuffed Peppers
Ingredients
- 1 lb ground turkey
- 2 14.5 oz cans diced tomatoes with green chilies drained
- 2 c corn kernels
- 4 large bell peppers cut in half, seeded
- 2/3 c water
- 1 c cheddar cheese
Instructions
-
Preheat oven to 400F degrees.
-
Brown turkey over medium heat in a large skillet, drain excess fat. (I usually add a little olive oil to the skillet to prevent sticking.)
-
Add tomatoes and corn, cook for 5 minutes and then remove from heat.
-
Place peppers in a 9x13 baking dish.
-
Spoon turkey mixture into peppers.
-
Pour water into dish around peppers and cover with foil.
-
Bake for 30 minutes.
-
Carefully remove from oven and lift foil (watch out for steam!!). Sprinkle cheese over each pepper and bake an additional 10 minutes, uncovered.
