This meal meets all my ‘musts’: Easy to make; few ingredients; tons of flavor!
Simple Salmon with Southwestern Veggies
- 2 T olive oil divided
- 2 zucchini medium, chopped
- 2 yellow squash medium, chopped
- 2 cans diced tomatoes with chilies drained
- 4 4 oz pieces salmon
- 1 t paprika
- 1 t garlic powder
- 1 t salt
Heat 1 T olive oil over medium heat in a large skillet and preheat oven to 400 degrees
Add zucchini and squash to skillet. Cook covered for 8-10 minutes, until vegetables are soft.
While veggies are cooking, place salmon on a piece of parchment paper on a baking pan. Drizzle with remaining olive oil. Top with seasonings. Bake for 8-10 minutes, until cooked through to desired state
While salmon is cooking, fold tomatoes into the vegetables in skillet. Cook covered until all are heated through, about five minutes.
