Simple Salmon with Southwestern Veggies {Whole30} {Paleo}

Simple Salmon with Southwestern Veggies

Servings 4

Ingredients

  • 2 T olive oil divided
  • 2 zucchini medium, chopped
  • 2 yellow squash medium, chopped
  • 2 cans diced tomatoes with chilies drained
  • 4 4 oz pieces salmon
  • 1 t paprika
  • 1 t garlic powder
  • 1 t salt

Instructions

  1. Heat 1 T olive oil over medium heat in a large skillet and preheat oven to 400 degrees
  2. Add zucchini and squash to skillet. Cook covered for 8-10 minutes, until vegetables are soft.
  3. While veggies are cooking, place salmon on a piece of parchment paper on a baking pan. Drizzle with remaining olive oil. Top with seasonings. Bake for 8-10 minutes, until cooked through to desired state
  4. While salmon is cooking, fold tomatoes into the vegetables in skillet. Cook covered until all are heated through, about five minutes.
  5. Serve immediately.
