Pan-Seared Greek Cod
- 1 T olive oil divided
- 1 1.5 lb filet of cod
- 1/4 c cherry tomatoes sliced in half
- 1/4 c kalmata olives sliced in half
- 3-4 quartered artichoke hearts
- 1 T capers
In a large skillet, heat 1/2 T olive oil over medium-high heat. Add cod to the pan. Cook on one side until browned (about 5 minutes). When flipping cod, add other 1/2 T olive oil to pan. Place uncooked side down. Cook for additional 4-5 minutes until browned.
Place cod on a serving dish. Top with remaining ingredients and serve hot.
