Pan-Seared Greek Cod {Whole30} {Paleo}

Pan-Seared Greek Cod

  • 1 T olive oil divided
  • 1 1.5 lb filet of cod
  • 1/4 c cherry tomatoes sliced in half
  • 1/4 c kalmata olives sliced in half
  • 3-4 quartered artichoke hearts
  • 1 T capers


  1. In a large skillet, heat 1/2 T olive oil over medium-high heat. Add cod to the pan. Cook on one side until browned (about 5 minutes). When flipping cod, add other 1/2 T olive oil to pan. Place uncooked side down. Cook for additional 4-5 minutes until browned. 

  2. Place cod on a serving dish. Top with remaining ingredients and serve hot.
