Sausage Breakfast Pie

I recently made this for brunch with friends.  It was a huge hit!  I’ve catered this recipe to include instructions for those on a stricter clean eating diet (Paleo / Whole30), if desired!

Sausage Breakfast Pie

Servings 6


  • 1 lb pork breakfast sausage
  • 1/2 32 oz bag of frozen shredded hash browns (or 4 large potatoes, grated for Whole30)
  • 1 t garlic powder
  • 1 t onion powder
  • 4 eggs
  • 1 c milk or egg whites for Whole30
  • 1 c shredded cheese optional


  1. Preheat oven to 350F degrees.

  2. In a medium-size skillet over medium heat, cook breakfast sausage fully, breaking into crumbles.

  3. At the same time, in a large-size well-greased skillet, cook potatoes until browned.

  4. In a well-greased pie pan, press potatoes into a firm crust at the bottom.

  5. Press sausage in the pan on top of the hash browns.

  6. In a small bowl, whisk together garlic, onion, eggs, and milk/egg whites. Pour evenly over sausage in the pie pan.

  7. Top with cheese, if desired.

  8. Bake for 40 minutes and serve hot.
