This is a favorite dish of mine to make when entertaining over lunch.
Greek Chicken Orzo Salad
- 1.5 c whole wheat orzo pasta uncooked
- 2 T olive oil divided
- 2 c shredded chicken
- 1/4 c green olives sliced
- 1/4 c kalmata olives sliced
- 1/2 c green onion chopped
- 1 c feta cheese crumbles
Cook orzo according to package instructions.
Rinse cooked orzo under cold water and toss with 1T olive oil to prevent sticking.
In a large bowl, toss orzo, shredded chicken, olives, green onion, and remaining 1T olive oil.
Top with feta.
Chill for at least 1 hour before serving.
