Bacon & Shrimp Stuffed Mushrooms
Servings 16 pieces
Ingredients
- 16 mushrooms white button
- 1 c shrimp salad-size, chopped
- 4 strips bacon cooked, crumbled
- 2 T paleo-friendly mayonnaise I like Primal Kitchen Avocado Oil Mayo
- 1/2 t oregano
- 1/2 t thyme
- 3 T almond flour if desired, for dusting the top

Preheat oven to 350F degrees

Clean the mushrooms. Hollow out the stems inside the cap. (Save and use the caps in other recipes, like a stir fry! 🙂 )

Combine the shrimp, bacon, mayo, and spices in a small bowl

Stuff each cap with heaping spoonful of shrimp mixture

In a greased 9x9 baking dish, place the stuffed mushrooms

Bake for 18 minutes, until mushrooms are browned
