I recently made this for brunch with friends. It was a huge hit! I’ve catered this recipe to include instructions for those on a stricter clean eating diet (Paleo / Whole30), if desired!
Sausage Breakfast Pie
Ingredients
- 1 lb pork breakfast sausage
- 1/2 32 oz bag of frozen shredded hash browns (or 4 large potatoes, grated for Whole30)
- 1 t garlic powder
- 1 t onion powder
- 4 eggs
- 1 c milk or egg whites for Whole30
- 1 c shredded cheese optional
Instructions

Preheat oven to 350F degrees.

In a medium-size skillet over medium heat, cook breakfast sausage fully, breaking into crumbles.

At the same time, in a large-size well-greased skillet, cook potatoes until browned.

In a well-greased pie pan, press potatoes into a firm crust at the bottom.

Press sausage in the pan on top of the hash browns.

In a small bowl, whisk together garlic, onion, eggs, and milk/egg whites. Pour evenly over sausage in the pie pan.

Top with cheese, if desired.

Bake for 40 minutes and serve hot.
