I love to make these up on Sunday afternoons and enjoy them for breakfast all week! They heat up in 1-2 minutes in the microwave. Enjoy!
Spinach Sausage Egg White Cups
Servings 12 cups
Ingredients
- 1 lb pork breakfast sausage
- 1 c onion chopped
- 2 c spinach chopped
- 32 oz liquid egg whites
- 1 c cheese shredded (no cheese for Whole30)
Instructions

In a medium skillet, saute sausage and onion. Cook through and drain.

Heat oven to 350F degrees.

Spray 12 cup muffin tin with cooking spray. Add even amounts of spinach to each cup. Repeat with sausage/onion mixture. Fill each cup with egg whites. Top with cheese.

Bake for 15-17 minutes. Allow to cool for 5 minutes before removing carefully from each cup.
