Sausage Zoodle Primavera {Whole30} {Paleo}

Sausage Zoodle Primavera

  • 3 T olive oil divided
  • 4 Italian chicken sausage links I love Brat Hans Mild version!!!
  • 2 T garlic minced
  • 1 bag baby spinach leaves
  • 5 mushrooms sliced
  • 1 jar marinara sauce make sure it has no added sugar!
  • 2 large zucchini spiralized
  • basil for garnish


  1. Slice sausage links into coins (as pictured). In a medium skillet, heat 1T olive oil over medium heat. Add sausage and cook until browned (~8-10 minutes), flipping as needed.
  2. While sausage is cooking, heat 2 T olive oil in a medium skillet. Add garlic and saute for 2-3 minutes. Add spinach and mushrooms. Place a lid and cook until the spinach is wilted, usually 6-8 minutes.
  3. When sausage is cooked, remove from skillet. Add marinara sauce and bring temperature to hot. Add zucchini noodles (zoodles). Toss in marinara sauce for 2-3 minutes.
  4. On each plate. Place an even amount of zoodles. Top with an even amount of spinach & mushrooms. Then top with chicken sausage. Garnish with basil.
  5. Serve immediately 🙂
