With Whole30 being dairy-free, gluten-free, etc-free…I have been on the hunt for something to replace my beloved milk & butter in mashed potatoes. No longer do I need to search….ENTER: Chicken Broth! It is the perfect liquid to soften this dish to just the right consistency! See my recipe below!
Garlic Mashed Potatoes
Servings 4
Ingredients
- 5 medium-size white potatoes peeled, diced
- 2 T garlic minced
- 1/2 - 1 c chicken broth as desired
Instructions

Bring a large pot of water and potatoes to boil

Continue boiling until potatoes are soft to the touch with a fork (~20-30 minutes)

Drain potatoes

Add garlic and broth to the pot

With a hand mixer, mix until creamy (add chicken broth SLOWLY, to desired consistency)

Serve hot!
