It’s usually about the Sunday after Thanksgiving when I can’t stand the sight of leftovers any longer. And yet, my fridge is still full of everything! I’ve been experimenting with ways to use up our mashed potatoes (I hate to waste food!) and these bacon & cheese tater muffins hit the ball out of the park! Enjoy!
Delicious Leftover Mashed Potatoes: Bacon & Cheese Tater Muffins
Servings 24 mini muffins
Ingredients
- 2 c mashed potatoes
- 3 eggs beaten well
- 1 c cheddar cheese shredded
- 1 c bacon cooked, crumbled
- 1 T garlic salt
Instructions

Preheat oven to 350F degrees

Grease 24-ct mini muffin tin

In a medium bowl, mix potatoes and eggs; add other ingredients

Spoon servings into muffin tin

Bake for 20 minutes, or until browned on the top

Allow to sit for a few minutes and spoon out of the muffin tins; serve warm
