Everyone in our family loves this side dish, even the baby who gobbles the blended version right up!
Cinnamon Roasted Sweet Potatoes
- 1 large sweet potato peeled, cubed
- 1 T coconut oil
- 1-2 T cinnamon to taste
Preheat oven to 400F degrees. In a 9x13 baking dish, toss sweet potatoes in oil. Top with cinnamon and toss. Bake for about 30 minutes, flipping potatoes halfway through.
