Chex-Crusted Salmon {Gluten-free}

This recipe is a go-to when we have company over for dinner.  It is easy to prepare and bakes in the oven, preventing the need to be a captive to the kitchen when entertaining.  And best of all, it’s super healthy!  Your guests will be WOW’d!

Chex-Crusted Salmon

Servings 4

Ingredients

  • 4 4oz salmon fillets
  • 3 T Dijon mustard
  • 1 T honey
  • 1/2 c Chex corn, finely crumbled
  • 1 T butter melted
  • 1 T parsley flakes

Instructions

  1. Preheat oven to 400F degrees.

  2. Combine mustard and honey in a small bowl. In a separate small bowl, combine Chex, butter, parsley.

  3. Place salmon fillets, skin down, on a foil-lined, greased cookie sheet.
  4. Spread honey-mustard evenly over the top of each piece of salmon.
  5. Carefully top each piece of salmon with Chex-mixture evenly. With a fork, press Chex-mixture firmly onto salmon to create a packed coating.
  6. Bake for 20 minutes, or until fish is cooked through completely.
