This recipe is a go-to when we have company over for dinner. It is easy to prepare and bakes in the oven, preventing the need to be a captive to the kitchen when entertaining. And best of all, it’s super healthy! Your guests will be WOW’d!
Chex-Crusted Salmon

Ingredients
- 4 4oz salmon fillets
- 3 T Dijon mustard
- 1 T honey
- 1/2 c Chex corn, finely crumbled
- 1 T butter melted
- 1 T parsley flakes
Instructions

Preheat oven to 400F degrees.

Combine mustard and honey in a small bowl. In a separate small bowl, combine Chex, butter, parsley.

Place salmon fillets, skin down, on a foil-lined, greased cookie sheet.

Spread honey-mustard evenly over the top of each piece of salmon.

Carefully top each piece of salmon with Chex-mixture evenly. With a fork, press Chex-mixture firmly onto salmon to create a packed coating.

Bake for 20 minutes, or until fish is cooked through completely.
