My mom made this cake for us every summer growing up. When my son requested a chocolate cake with chocolate icing for his birthday, I knew this recipe would be a hit!
Chocolate Zucchini Cake

Ingredients
- 2 T butter softened
- 1/4 c coconut oil melted
- 3/4 c sugar white
- 1 egg
- 1 t vanilla
- 1/4 c sour milk milk with a splash of vinegar
- 3/4 c flour
- 2 T cocoa
- 1/2 t baking soda
- 1/2 t baking powder
- 1 t cinnamon
- 1 c grated zucchini peel on
- 1/4 c dark chocolate chunks
- dark chocolate icing optional
Instructions

Preheat oven to 325F degrees.

In a large mixing bowl, combine butter, oil, sugar, eggs, vanilla, and milk. Mix with a hand mixer until smooth.

Slowly add in flour. Then add cocoa, baking soda, baking powder, and cinnamon. Mix until smooth.

Add zucchini and fold in with a spoon.

Add chocolate chips and fold in with a spoon.

Put batter in a greased (I use coconut oil) 8x8in square pan.

Bake for 30-35 minutes.

Optional: Once cooled, ice cake.
