Pumpkin Muffins

Servings 24 muffins

Ingredients

  • 1 c sugar
  • 3 eggs
  • 1/2 c coconut oil melted
  • 1 15 oz can pumpkin puree (not pumpkin pie filling)
  • 2 c flour
  • 2 t baking soda
  • 2 T flax seed
  • 1 T cinnamon
  • 2 c raisins

Instructions

  1. Preheat oven to 350F degrees.

  2. Line 24 muffin cups with paper liners.

  3. In a large bowl, mix together sugar, eggs, oil, and pumpkin with a hand mixer until smooth.

  4. Slowly add in flour.

  5. Add baking soda, flax seed and cinnamon.  Mix until smooth.

  6. Fold in raisins.

  7. Scoop batter into each muffin tin, filling about 2/3 full.

  8. Bake for 18-20 minutes.
