Ratatouille

Ingredients

  • 2 T olive oil
  • 2 yellow onion peeled and sliced
  • 4 roma tomatoes cored and chopped
  • 1 yellow squash cubed
  • 1 zucchini cut into thick slices (or cubed if you have a large zucchini)
  • 4 garlic clobes minced
  • 1 T Herbs de Provence
  • grated parmesan optional - Not Whole30/Paleo

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the onion and cook for 5 minutes, stirring occasionally. Stir in the other ingredients. Allow the mixture to come to a simmer. Reduce heat to low. Cook uncovered for 1-2 hours, stirring occasionally. Serve hot!
