Chicken Taco Soup

Servings 8


  • 3 c shredded chicken I'd recommend cutting into smaller pieces
  • 1 c cherry tomatoes
  • 1 c yellow pepper chopped
  • 2 carrots peeled, chopped
  • 8 oz can tomato sauce
  • 3 c chicken broth
  • 1 package of taco seasoning
  • 2 avocados sliced


  1. Combine all ingredients in a large pot and stir until taco seasoning is dissolved. (My recipe for shredded chicken can be found here.)

  2. Bring soup to a boil.
  3. Reduce heat to a simmer and cover pot.
  4. Cook for an additional 30 minutes, stirring occasionally.
  5. Serve hot with sliced avocado.
