Ingredients

Cookie Bar

  • 2 c flour white
  • 1/2 c cocoa powder
  • 1 t baking powder
  • 8 T butter unsalted, softened
  • 1 c sugar white
  • 1 egg
  • 2 T milk
  • 1 t vanilla exract

Icing

  • 5 T butter unsalted, softened
  • 4 T milk
  • 3 c powdered sugar sifted
  • 1 t mint extract
  • green food coloring to desired coloring
  • 1/2 c dark chocolate/mint chips

Instructions

  1. Preheat oven to 375F degrees
  2. In a small bowl, mix flour, cocoa, baking power, and salt
  3. In a large bowl, mix together butter and sugar until creamed (about 2-3 minutes), then add egg, milk, vanilla and mix
  4. Slowly add dry ingredients from small bowl
  5. Grease a 9x13 cake pan and press cookie dough into the bottom (I used my hands then a fork to spread evenly!)
  6. Bake for 15 minutes and cool
  7. Meanwhile, combine all icing ingredients, except chocolate/mint chips, and mix until fluffy
  8. Remove cookie bar from pan and spread evenly with icing
  9. Cut into squares
  10. Melt chocolate/mint chips in a small bowl in the microwave in small time increments (15-20 seconds, stirring in between)
  11. Drizzle chocolate over the squares
