Toddler Turkey Meatballs {Gluten-free}

Servings 24 meatballs

Ingredients

  • 1 egg
  • 2 T olive oil
  • 1 lb ground turkey
  • 1/2 c gluten-free bread crumbs
  • 1/2 c frozen mixed veggies unthawed

Instructions

  1. Preheat oven to 350F degrees.
  2. In a medium bowl, whisk egg.
  3. Add olive oil, ground turkey, and bread crumbs.
  4. Mix (I suggest using your hands) until combined.
  5. Add frozen veggies and mix until combined.
  6. Lightly grease a 24-cup mini muffin pan.
  7. Roll turkey mixture into 24 meatballs and place each into a muffin cup.
  8. Bake for 30-40 minutes.
