Dill Summer Salad

Servings 6

Ingredients

  • 1 cucumber diced
  • 1 c cherry tomatoes
  • 2 c snap peas
  • 1/8 c olive oil
  • 1/2 lemon juice
  • 1 T dill

Instructions

  1. Toss all ingredients in a large bowl.  Refrigerate for at least 1 hour before serving.  Best served on the day you make it as oil will start to separate in the fridge after a day or two.
