Delicious Leftover Mashed Potatoes: Bacon & Cheese Tater Muffins

Servings 24 mini muffins

Ingredients

  • 2 c mashed potatoes
  • 3 eggs beaten well
  • 1 c cheddar cheese shredded
  • 1 c bacon cooked, crumbled
  • 1 T garlic salt

Instructions

  1. Preheat oven to 350F degrees

  2. Grease 24-ct mini muffin tin

  3. In a medium bowl, mix potatoes and eggs; add other ingredients

  4. Spoon servings into muffin tin

  5. Bake for 20 minutes, or until browned on the top

  6. Allow to sit for a few minutes and spoon out of the muffin tins; serve warm
